I didn't name the recipe, so don't go at me if it's not true Japanese. It is yummy though. I also scaled it down for one person.
Take half of one onion, sliced.
Saute it in a little oil (and by little I mean no more than 1 tablespoon) for 5 minutes until soft but not translucent. Add one small zucchini sliced into matchstick size pieces. Cook one minute, stirring constantly.
Add one tablespoon teriyaki sauce, a splash or two of soy sauce and a shake of toasted sesame seeds. Stir and cook for 5 minutes.
Sprinkle on a little black pepper, stir and remove from heat.
Eat and enjoy.
It's a fabulous change if you have a bumper crop of zucchini.
I think my husband would even like it.
He's really not thrilled with the amount of zucchini in our lives right now.
